Calabria’s cold meats

Calabria’s cold meats represent the main and most important food of Calabrian Gastronomy.Throughout centuries popular traditions and customs have grown about the pig and its slaughtering which at times differ from one town to the other; hot chilli is the common denominator.

The slaughtering of this animal was inevitably a feast in which the pig represented a sacrifice. The art of slaughtering, consisting in choosing the meat that is most suited to the type of cold meat one wishes to have, is very important.

In fact the typical cold meats derive from the art of slaughtering; the Soppressata (cured salami); sweet and spicy sausages, smoked bacon, Nduja, Culatello (ham) “Prosciutto crudo Maccularu” (raw ham) that is the Guanciale (type of bacon).
